Gastronomy
Mexico is a country with one of the richest and most well-known gastronomy in the world. ... It reflects an entire culture and is a crucial element of national identity. Traditional Mexican food is one of the most outstanding expressions of Mexico’s cultural heritage.
In 2010, Mexican gastronomy was declared Intangible Cultural Heritage of Humanity by the United Nations Organization for Education, Science, and Culture (UNESCO), exclaiming that “the kitchen in Mexico is considered a crucial element of national identity, due to its history, creativity, diversity, and transcendence.”
The gastronomic heritage of regional and local Mexican cuisine is a powerful attraction for tourists, food connoisseurs and food enthusiasts. In addition to traditional favorites, Mexican cuisine has surged to the global stage of fine dining. New generations of chefs have infused complexity and creativity into traditional recipes, and inspired new variations, bringing prominent distinction to Mexican gastronomy.
The latest “World’s 50 Best Restaurants” list includes two Mexican restaurants; “Latin America’s Top 50 Restaurants” includes 11 Mexican restaurants.
Oaxaca, Yucatan and Puebla have long enjoyed recognition as having some of Mexico’s most varied, complex and delectable regional cuisines, including Oaxaca’s complex molé sauces, Tlayudas, and, of course, Oaxacan style cheese; Yucatan’s Cochinita Pipil (Mayan style earthen roasted pig), Panuchos, and Sopa de Lima; Puebla’s Chile en Nogada, Chalupas and Molé Poblano.
Mexican beverages are varied, regional and celebrated world-wide: Small batch mezcal (Oaxaca); award winning wine from Valle de Guadalupe (Baja) and Guanajuato state; regional and craft beers; and, of course, tequila, which enjoys a protected designation of origin (PDO), legally ensuring it can only be produced in the state of Jalisco (and limited municipalities in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas). Tequila is recognized as a Mexican designation of origin product in more than 40 countries.
“The most exciting, vibrant, captivating and seductive food that exists on Earth is in Mexico,” says Parker Bowles, British restaurant critic and food writer. Bowles also says, “It is the food that has conquered the world, not only with its dishes but with the passion, creativity, warmth, and love of life that its creators tuck into it during the preparation process.”
